Bring on the Jamaican Chilled Avocado Soup
Ever since we moved into our new place, my husband has been a cooking manic! I feel like I am in a restaurant. And I LOVE IT! ♥
The other night I asked him to make Avocado Soup.

Why would I want cold soup in winter? Well, that’s just me. {I love ice cream in the cold and snow, too.} And my husband was fine with it because he got to use our new wedding food processor.

This recipe {found via Emeril} is definetly NOT low-fat. See the half & half being added above …

… And I was a little wary when we were instructed to add lime juice to sour cream. It made me worry that this recipe may end up hurting my tum-tum.

But once we started ladling it into bowls and I could smell all that yummy avocadoness — I felt much more confident and hungry.

Let me tell you — this soup is REALLY good and totally satisfying. We decided to add bacon in addition to the lime cream when finishing off the dish — because in my house we believe bacon makes everything better.
